Some breakfasts make the morning feel calmer, and these Crispy Egg-Free French Toast Bites are one of those recipes I reach for again and again. They’re quick, golden, and honestly one of the easiest things I’ve made for the kids. Before we get started, here’s the link to my Crispy Egg-Free Chicken Nuggets, because a lot of you make both for weekend brunches when you want something fun:

Because French toast usually relies on eggs, I know it can feel like one of those recipes you have to avoid, but this version is soft in the middle and crisp on the outside without needing eggs at all. If you want a little extra reading on dairy-free swaps and breakfast ideas, this simple guide from BBC Good Food is clear and really familiar. Crispy Egg-Free French Toast Bites.

And just to mention it again, these Crispy Egg-Free French Toast Bites really do work for busy school mornings when you want something fast but still feel like you’ve made a proper breakfast.

Ingredients

  • 6–8 slices of soft bread
  • 250ml milk (any dairy-free option works)
  • 1 tbsp cornflour
  • 1 tbsp sugar
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • Oil or dairy-free butter for frying
  • Optional: cinnamon sugar or syrup

Method

Step 1: Make the Custard Mixture

Start by whisking the milk, cornflour, sugar, cinnamon, and vanilla in a shallow bowl. First, whisk until everything is smooth because any small lumps will stay stubborn later. Meanwhile, give the bowl a small swirl to make sure the cornflour hasn’t settled. Afterwards, leave the mixture on the counter so it’s ready when you need it. Eventually, it thickens slightly as it rests, which actually helps the coating stick better.

Step 2: Prepare the Bread Cubes

Next, slice your bread into little cubes. Once they’re cut, keep them in a big bowl so you can grab handfuls easily. While you’re doing this, warm a frying pan on medium heat to save time. Sometimes, I cut an extra slice or two if I know the kids are extra hungry. Before dipping, just give everything a quick tidy so the dipping step feels easier.

Step 3: Dip the Bread in Custard

Take a handful of cubes and drop them straight into the custard mixture. Then, turn them gently so all sides get coated. During this step, don’t let them soak for too long or they’ll fall apart. Occasionally, I give the custard another little whisk to keep it smooth. Immediately, move the coated cubes to the pan once they feel slightly heavier.

Step 4: Fry the French Toast Bites

Add a spoonful of oil or dairy-free butter to the warm pan. After, place the coated bread cubes in a single layer. While they cook, resist the urge to move them around too soon, that’s how the crisp edges form. Eventually, the bottoms turn golden. Once again, flip them gently with a spatula so each side crisps evenly. Although they cook fast, give them enough time to colour properly. Still, keep the heat steady so they don’t burn.

Step 5: Drain on a Kitchen Towel

Finally, lift the cooked cubes onto a plate lined with a kitchen towel. Later, you’ll see the towel helps remove the extra oil, keeping them light but still crisp. Otherwise, they can taste slightly heavy.

Step 6: Optional Cinnamon Sugar Coating

This bit is completely optional, but honestly so good. Because the bites are still warm, toss them gently in a bowl of cinnamon sugar, and they stick perfectly. Therefore, you get that classic cinnamon toast flavour without extra work. In the end, the kids always prefer them this way.

Step 7: Serve Warm

In the end, they should be crisp on the outside and soft in the middle. Once again, give them a quick taste test before serving; they cool quickly. Although they’re simple, they feel like proper comfort food. Because they’re egg-free, they tend to stay lighter. Still, they fill everyone up beautifully. Therefore, they’ve turned into one of our most repeated breakfasts. And after you make them once, you’ll see how easily they fit into busy mornings.
